Sous Chef for 6* cruise ship

6* Cruise ship, app. 900 passengers, 600 crew, cruising worldwide

Double cabins with shower/toilet, crew facilities (bistro, bar, gym, restaurant, pool, library, internet etc.)

Key duties:

* Reports directly to Senior Sous Chef / Chef de Cuisine
* operate as a Chef de cuisine while his absence
* to assume responsibilities for the operation of assigned section of the galley
* To prepare dishes on the daily menu and to handle and store food items properly in assigned sections of the galley
* to take active part in the actual food preparation in assigned section in the galley and to ensure that products are consistently prepared according to the highest possible standards
* to manage staff in assigned section in the galley and to ensure that galley equipment is maintained properly, that the highest standards of cleanliness are kept and that safe food handling is practiced at all times
* to ensure that a six star service is provided at all times
